Ingredients
6 pieces of bacon, cooked and chopped
1/2 onion, diced
1/2 bell pepper, diced
4 eggs
2 cups shredded hash browns
1 cup cheddar, shredded
1 cup colby jack, shredded
1 tbsp sea salt
1 tbsp pepper
1/2 cup cheddar, shredded (for topping)
Directions
- In a large bowl, add and mix everything
- Add mixture to a baking dish. I use an 8×8 or 9×9 oven safe dish.
- Air fryer at 320 degrees for 15-20min or until the egg has set.
- Remove from air fryer and top with remainder of cheese. Air fry at 390 degrees for 2min. Enjoy!
- You may need to air fry longer based on the power level of your air fryer. If so, just cover it with aluminum foil.
