TIPS FOR MAKING AIR FRY BREAKFAST POTATO SKINS

  • Choose large russet potatoes that are firm and free of blemishes. Scrub the potatoes clean and dry them with a paper towel.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Pierce the potatoes several times with a fork to allow steam to escape while cooking.
  • Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until they are cooked through and tender.
  • Once the potatoes are cooked, remove them from the air fryer basket and let them cool for a few minutes.
  • Cut the potatoes in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato in the skins.
  • Brush the potato skins with a thin layer of olive oil and sprinkle them with salt.

Ingredients

  • 3 large russet potatoes

  • 4 eggs, scrambled

  • 5 pieces of bacon, chopped

  • 1 tbsp olive oil

  • salt, to taste

  • pepper, to taste

  • 3/4 cup shredded colby jack cheese

  • 1/2 cup sour cream, topping

  • 1/4 cup green onions, topping

Directions

  • In a large bowl, add your potatoes. Toss your potatoes in olive oil and season with salt and pepper.
  • Place potatoes into the air fryer basket or tray. Air fry potatoes at 400 degrees for 25-30min or until fork tender.
  • Let the potatoes cool. Cut them in half and scoop out a portion of the potatoes inside.
  • Begin building potato skins. Top your air fryer potatoes with the scrambled egg, chopped bacon, and cheese.
  • Place the breakfast potatoes back into the air fryer at 350 degrees for 3-5min or until the cheese has melted.
