- We’re starting with the beef stew because it will take approx. 5-6hrs. In a large bowl start by adding cubes of meat, olive oil, salt, and pepper.
- In a large pot on high heat, add 2 tbsp of olive oil, sear beef cubes off on all sides, and set aside. **Make sure you have developed a nice crust. After searing beef, lower temp to med. Add 2 tbsp of olive oil. Add onion and carrots and cook for 5min.
- Add minced garlic and tomato paste. Cook until tomato paste begins to brown. (About 2min) Add beef back to the pot. Pour in red wine, beef stock, and water and bring to a boil. Lower temp to simmer and add a lid. Add thyme and bay leaf and let cook for 5hrs. Salt and pepper to taste.
