When making Air Fryer Mexican Street Corn, you can cook the corn however you like. Often times you’ll find it grilled or boiled. Well, maybe after trying this recipe you’ll consider air frying! I’m a big fan of cooking corn on a hot grill. Corn soaked in water with the husked on to ensure that the corn roasts nicely without burning. Not to mention that undeniable smokey grilled flavor you get from using charcoal. With that all being said, going with the air fryer cooking method is a great alternative that’s extremely quick and easy. Remove the husk and toss it right in the air fryer. That’s it!

Ingredients
8 mini ears of corn (or 4 cobs cut in half)
1/2 cup mayo
1/2 cup sour cream
1 tsp of chili powder
1 tsp smoked paprika
1 tsp garlic powder
1/4 cup chopped cilantro, divided
1/4 cup cotija cheese
1 lime
2 tbsp olive oil
Salt, to taste
Pepper, to taste
Directions
- Place corn in a large bowl. Pour your olive oil over the corn. Using your hand toss in olive oil until each piece of corn is coated evenly. The olive oil with help with allowing the seasonings to stick. It will also help with the cooking process.
- Place corn on air fryer basket or tray. Make sure they are evenly seperated as you don’t want them touching. Air fry corn at 370 degrees for 15-17min or until slight charred. **If you are using a basking style air fryer, turn the corn half way.
- In a small bowl mix mayo, sour cream, chili powder, smoked paprika, garlic powder, and divided cilantro.
- After the corn has completed cooking. Take out of the air fryer and let cool for 1-2min. Spread mixture over air-fried corn.
- Top corn with cheese and other half of divided cilantro. Squeeze a little lime on top and enjoy!
