Ingredients

2 Cups Fresh Blueberries
1/2 Lemon, Juiced
1/4 cup Sugar
- Cheesecake Base
24 oz cream cheese packages, softened
2 tbsp Sour Cream
4 Eggs, room temperature
1 cup sugar
1 tsp vanilla extract
- Topping
1 cup blueberries
2 cups whipped topping
2 tsp cornstarch
Directions
- Preheat the air fryer to 300 degrees for 5min. In a large bowl, pour the graham cracker crust and melted butter in. Mix until it’s evenly incorporated. Pour on the base of an 8-inch springform pan. Air fry your crust at 300 degrees for 5min.
- In a small blender, add your blueberries, lemon juice, and sugar, and blend well.
- In a large bowl, add your cheesecake base ingredients: cream cheese, sour cream, sugar, and vanilla extract. Use a handheld mixer to mix well.
- Add Eggs, 1 by 1, and mix well. Do not over-mix! Preheat the Air Fryer to 300 Degrees for 5min.
- Add the blended blueberry mixture to the cheesecake base and mix until it has incorporated evenly.
- Pour the cheesecake mixture into the spring form pan and shake left to right to level it out. Air Fry at 300 Degrees for 35-40min. (If your Cheesecake is cooking too fast on the top, place a piece of aluminum foil over it and continue cooking)
- Make sure to check cheesecake doneness with a toothpick. If it comes out clean, the cheesecake is done. Let Cheesecake cool and put it into the fridge for a minimum of 4hrs or overnight. Remove from fridge and add a layer of whipped cream and top with blueberries.
