I used some leftover cold mashed potatoes to quickly whip up these pancakes. In these pancakes, I packed them with cheese, however, feel free to style them how you’d like! Paired with Lamb Chops, this makes a really good weeknight meal! #airfryerpapi

Ingredients

  • Potato Pancake Ingredients
  • 3 C Mashed Potatoes, Cold

  • 1/2 C Cheddar Cheese, Shredded

  • 2 Green Onion, chopped

  • 1 Egg, Beaten

  • 3/4 C All Purpose Flour

  • 1 T Garlic Powder

  • 1 T Onion Powder

  • 1 tsp Paprika

  • Olive Oil Spray

  • Lamb Chops Ingredients
  • 5 Lamb Chops

  • 3 T Olive Oil

  • 1 T Garlic Powder

  • 1 T Onion Powder

  • 1 tsp Creole Seasoning

  • 1 tsp Paprika

  • 1 tsp Sea Salt

  • 1 tsp Black Pepper

  • Other
  • 1 T Sour Cream

Directions

  • In a small bowl, add olive oil, garlic powder, onion powder, creole seasoning and paprika. Mix until combined evenly. In a large bowl, pour mixture over the lamb chops and rub in well.
  • In a preheated air fryer at 400 Degrees, place lamb chops in and air fry at 400 for 7-9 minutes.
  • In a large bowl with chilled mashed potatoes, add flour, cheese, egg, green onion, garlic powder, onion powder, and paprika. Mix together until everything is incorporated evenly.
  • Preheat air fryer to 380 Degrees for 5 minutes. In a parchment-lined tray/basket, place a large spoonful of potato mixture and evenly. Spray the top of the potato mixture with olive oil and air fry at 380 degrees for 15 minutes. Flip the pancakes, spray them with olive oil, and air fry for another 15 minutes.
  • Top your pancakes with sour cream and serve immediately!

  • For best results make sure your potatoes are complete chilled. Left over potatoes work the best!
