TIPS FOR MAKING AIR FRY BREAKFAST POTATO SKINS
- Choose large russet potatoes that are firm and free of blemishes. Scrub the potatoes clean and dry them with a paper towel.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Pierce the potatoes several times with a fork to allow steam to escape while cooking.
- Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until they are cooked through and tender.
- Once the potatoes are cooked, remove them from the air fryer basket and let them cool for a few minutes.

Ingredients
3 large russet potatoes
4 eggs, scrambled
5 pieces of bacon, chopped
1 tbsp olive oil
salt, to taste
pepper, to taste
3/4 cup shredded colby jack cheese
1/2 cup sour cream, topping
1/4 cup green onions, topping
Directions
- In a large bowl, add your potatoes. Toss your potatoes in olive oil and season with salt and pepper.
- Place potatoes into the air fryer basket or tray. Air fry potatoes at 400 degrees for 25-30min or until fork tender.
- Let the potatoes cool. Cut them in half and scoop out a portion of the potatoes inside.
- Begin building potato skins. Top your air fryer potatoes with the scrambled egg, chopped bacon, and cheese.
- Place the breakfast potatoes back into the air fryer at 350 degrees for 3-5min or until the cheese has melted.
