Ingredients:
- 2 lbs chicken breast (or Thighs), cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
For the Marinade:
- 1 cup Greek yogurt
- 2 Tbsp garlic, minced
- 1 Tsp Paprika
- 1 Tbsp lemon juice
- 1/4 cup olive oil
- 1 Tbsp dried oregano
- 1 Tbsp salt
- 1 Tbsp pepper
- 5 Skewers
Instructions:
- Place all of the Chicken pieces in a bowl. Add all of the marinade ingredients and mix well. Make sure each piece is coated with the marinade. Cover the bowl and let the chicken marinate for at least 2 hours.
- Preheat your air fryer to 400°F.
- Thread the marinated chicken and vegetables onto skewers, alternating between chicken and different types of vegetables.
- Place the skewers into the air fryer and cook for 15-18 minutes, turning halfway through. Serve immediately. Enjoy!
